Parsley and Tahini Sauce



2 cloves
¼ - ½ cup water
½ tsp salt
½ cup lemon juice
½ cup tahini
1 cup parsley (finely chopped)

Crush the garlic with the salt. Gradually add the tahini and beat well. Add a little water and lemon juice alternately to the mix, until it reaches the desired consistency. (water thickens, lemon juice thins) Add the chopped parsley after all the lemon juice and ¼ cup of water have been added. Beat well and add more water only if necessary.
